Stainless steel flatware is available in four qualities: 13/0, 18/0, 18/8, or 18/10. These designations refer to the percentages of chromium and nickel in the stainless steel alloy. Chromium will be used in the stainless steel to provide extra durability providing rust and corrosion resistance, while nickel is used to give flatware its luster and finish.
18/10 (304 stainless steel) - Contains 18% chromium and 10% nickel.
18/0 (420 stainless steel) - Contains 18% chromium and 0% nickel.
18/8 (304 stainless steel) - Contains 18% chromium and 8% nickel.
13/0 (410 stainless steel) - Contains 13% chromium and 0% nickel.
Most dinner and dessert knives are made with 13/0 stainless steel. This steel is ideal for blade forging to produce a sharp cutting surface, while still maintaining rust and corrosion resistance properties and keep the knives sharp at all times.

This is primarily called medium weight flatware in the industry but it can also be called economy weight and it is mainly a product selected for professional that are looking for an economical flatware. Heavy Weight: Heavy weight flatware is even more durable than medium weight flatware, it is not easy to bent, and makes for a nice presentation. Usually this type of flatware is commonly used in high scale quality establishments from medium weight, it is mainly used in fast casual or fine dining venues.
Extra Heavy Weight Flatware: this is thepremium grade of flatware, extra heavy weight flatware provides a level of quality that you will see at most finer restaurants and/or hotels. It feels very sturdy in your hand and is quite difficult to bend if we compare to medium or even heavy weight flatware.
